Chocolate Cake

This chocolate layer cake is a rich and moist treat, featuring layers of fluffy chocolate sponge, filled with a smooth chocolate ganache. Ingredients

  • 1 ¾ cups all-purpose flour

  • 1 ¾ cups granulated sugar

  • ¾ cup unsweetened cocoa powder

  • 1 ½ teaspoons baking powder

  • 1 ½ teaspoons baking soda

  • 1 teaspoon salt

  • 2 large eggs

  • 1 cup whole milk

  • ½ cup vegetable oil

  • 2 teaspoons vanilla extract

  • 1 cup boiling water

  • For the frosting:

  • 1 cup unsalted butter, softened

  • 3 ½ cups powdered sugar

  • ½ cup unsweetened cocoa powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

  • ¼ cup heavy cream (adjust for consistency)


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

  2. Mix Dry Ingredients: In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. Combine Wet Ingredients: Add eggs, milk, oil, and vanilla to the dry ingredients. Mix on medium speed for 2 minutes. Stir in boiling water until combined (batter will be thin).

  4. Bake the Cakes: Pour batter evenly into prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.

  5. Make the Frosting: In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar and cocoa powder, alternating with heavy cream. Beat until smooth and fluffy.

  6. Assemble the Cake: Place one layer of cake on a serving plate. Spread a layer of frosting on top, then place the second cake on top. Frost the top and sides of the cake with the remaining frosting. Decorate as desired.
